Things I've Cooked Lately

Here's another installment of "things I've cooked lately", otherwise known as "I'm too lazy to write a whole post on one thing".

First, we have almonds for biscotti. Yummy little cookies. And I thought the picture was cool. Although it made me realize just how badly I need to send my knife to Kyocera to have it sharpened.


Next up, my take on a Cubano sandwich, using pork from a shoulder roast I made, Swiss cheese, deli ham, pickles, and mustard. Tip: Leave the pickles off the sandwich until after it's toasted. Because hot pickles are weird.


And from the same pork shoulder, crispy happy cracklings. Just peel off the skin and bake it at 350-400 until crackly.


And finally, butter. Why butter? Because I made it myself by shaking the hell out of some leftover cream. It was awesome.

love the butter - sounds like that wiggle device that they are promoting on TV to strengthen womens arms - and that all I have to say about that.

Hey doggy - Hmm, good excuse to make (and eat) more butter, I'll have stronger arms :)

I was first going to compliment about the sandwich until I scrolled down and saw the crackling..(!) Dude that looks insanely good!!

Hi Dennis - It was! I had to threaten people with sharp objects to keep them away just so I could get a picture :)

"Because hot pickles are weird."

A bar in Lafayette serves deep fried pickle chips, so whenever we're down there for an event we stop there. This year we had to make it home early, so we skipped the bar with the pickle chips, and I made them myself. Used egg and seasoned rice flour, served with horseradish sauce and Sriracha mayo. Yum! I couldn't keep making them fast enough-- by the time a batch was ready to come out of the oil, the previous batch was already long gone.

Desco - Somehow I knew you'd bring up deep fried pickles. Which are delicious. So let me clarify - hot pickles on a sandwich are weird. Deep fried anything is good.
