Baked Spinach and Eggs...

...turned into a sandwich with an English muffin and Canadian bacon.

I bookmarked the recipe for Baked Spinach and Eggs from We are Never Full a couple days ago. Instead of serving it with a steak, I made a sandwich.

Toasted English muffin, skillet-seared Canadian bacon. Happy runny yolk and creamy spinach. Extremely messy - maybe less cream next time? There will definitely be a next time.

Hi! Thanks for giving the recipe a twirl. I think you're right - if you're going to eat it on bread that you are required to pick up and eat, I'd most definitely use less cream or maybe even drain it a bit with a slotted spoon before putting it on the bun/english muffin. Great idea, though. also, our eggs weren't very runny, so we may have cooked ours more leading to the cream to be reduced a bit more.

I thought about open-face, knife-and-fork, and maybe that would've been the better way to go. And I'm a sucker for runny yolk :-) Thanks again!

Messy food = fun food! Messy or not, it looks delicious, and I want to dig in.

Hi MrOrph -
McAnything is McNothing compared to a homemade sandwich. Thanks for visiting!
